Frozen Blueberry Pie for Memorial Weekend

After two weekends devoted to blueberry picking, we decided to treat ourselves with a piece of scrumptious frozen blueberry pie. The Maassen’s love this recipe because: a) is easy as pie! b) it has blueberries in it, and c) it’s a great dessert to have when the heat is on.

Frozen blueberry pie


¼ c sugar

¼ t salt

1 T flour

¼ c light corn syrup

1 egg

1 ¼ c coconut

¼ c pecans

Cook pie crust at 400 degrees for 5 minutes.

Spread above mixture in and up sides of pie shell.

Bake at 375 degrees for 15 minutes.

While pie shell is cooling…


1 ½ c frozen blueberries (cut  or minced in small pieces)

2/3 c sugar

1 container of cool whip

Put mixture in cooled pie shell and place in freezer several hours before serving.
